ZYMAFLORE® OMEGALT is a terroir isolate strain from the species Lachancea thermotolerans, selected for its ability to convert part of the sugar in the must into L-lactic acid.

ZYMAFLORE® OMEGALT allows:

• An increase in total acidity.

• A drop in pH.

• A reduction in the alcoholic strength of the wines produced by converting fermentable sugars into acid rather than ethanol.

Note that a selected Saccharomyces cerevisiae yeast is necessary to complete the alcoholic fermentation.

DOSAGE:

Recommended dose: 5 -20 g/hL (50 - 200 ppm) depending on the environmental conditions, fermentation temperature and the required level of BIOAcidification
